Ingredients
  

Noodles and Shrimp
  • 2 medium Zucchinis For noodling
  • 8 oz Raw shrimp, peeled and deveined Don't skimp, get the good ones
Flavorings
  • 2 cloves Fresh garlic Not dried garlic from the pantry
  • 1 medium Lemon Zest and juice required
  • 2 tbsp Olive oil For cooking
  • to taste Salt and black pepper Remember, simple is best
  • a pinch Chili flakes Optional for heat
  • to taste Fresh parsley Optional for garnish

Method
 

Preparation
  1. Turn the zucchinis into noodles using a spiralizer or a peeler.
  2. Toss the shrimp with salt, pepper, lemon zest, and minced garlic.
Cooking
  1. Heat olive oil in a pan and add the seasoned shrimp.
  2. Cook the shrimp until they turn pink and then set aside.
  3. Toss the zucchini noodles in the leftover garlicky oil just to warm them up.
  4. Squeeze lemon juice over the dish and plate the shrimp on top.
  5. Sprinkle with parsley and chili flakes if desired. Serve immediately.

Notes

If you have leftovers, store them in an airtight container, keeping shrimp and noodles separate. Zucchini noodles may become watery if left too long in the pan, so warm them quickly.
