Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
- In a large mixing bowl, beat the softened butter with both brown and granulated sugar until creamy and smooth—about 2-3 minutes.
- Beat in the eggs one at a time, mixing thoroughly, followed by the vanilla extract.
- Gradually add the dry mixture to the wet, mixing just until incorporated.
- Gently stir in the semisweet and white chocolate chips, and shredded coconut if using.
- Using a spoon or cookie scoop, drop generous amounts of dough onto prepared baking sheets, leaving about 2 inches between each cookie.
Baking
- Bake for 10-12 minutes until the edges are golden brown, while the centers remain soft.
- Allow the cookies to cool on the baking sheets before transferring them to wire racks. Dust with powdered sugar for a snow effect.
Notes
Ensure butter is softened for ideal texture. Experiment with different chocolate types or nuts for personalization. Serve alongside festive drinks like hot cocoa or apple cider.
