Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
  3. In a large mixing bowl, beat the softened butter with both brown and granulated sugar until creamy and smooth—about 2-3 minutes.
  4. Beat in the eggs one at a time, mixing thoroughly, followed by the vanilla extract.
  5. Gradually add the dry mixture to the wet, mixing just until incorporated.
  6. Gently stir in the semisweet and white chocolate chips, and shredded coconut if using.
  7. Using a spoon or cookie scoop, drop generous amounts of dough onto prepared baking sheets, leaving about 2 inches between each cookie.
Baking
  1. Bake for 10-12 minutes until the edges are golden brown, while the centers remain soft.
  2. Allow the cookies to cool on the baking sheets before transferring them to wire racks. Dust with powdered sugar for a snow effect.
