  • 2 cups mandarin orange sections (4-6 mandarin oranges) Tender segments with a citrusy zing.
  • 1 cup pomegranate arils Crunchy and jewel-like, adding bursts of tartness.
  • 2 cups kiwi chunks (4) Creamy and aromatic with vibrant color.
  • 1 cup blueberries (optional) Rich and subtly tangy taste.
Dressing
  • 2 tbsp lime juice (freshly squeezed) Zesty and invigorating.
  • 1 tsp lime zest (grated) Aromatic, intensifying the flavor.
  • 2 tbsp honey (or maple syrup/agave) Natural sweetener bringing flavors together.

Preparation
  1. Prep the fruits by cutting the pineapple into bite-sized chunks, peeling and segmenting the mandarin oranges, scooping out and chopping the kiwis, rinsing the blueberries, and removing the arils from the pomegranate. Ensure all fruits are in bite-sized pieces.
Dressing
  1. In a small bowl, whisk together the freshly squeezed lime juice, lime zest, and honey until well combined.
Combine
  1. Add the prepared fruits into a large serving bowl and drizzle the lime dressing over the top. Gently toss to combine, ensuring every piece is coated in the dressing.
Serving
  1. Serve immediately for freshness, or cover and refrigerate for up to 4 hours to allow the flavors to meld before serving.
