  • 4 medium-sized medium-sized beets Sweet and earthy, the heart of the salad.
  • 4 cups mixed greens A blend of arugula and spinach.
  • 1/2 cup crumbled goat cheese Adds creaminess and tang.
  • 1/2 cup walnuts, toasted Provides crunch and nutty flavor.
  • 1/4 cup dried cranberries Adds sweetness and color.
  • 1/4 cup thinly sliced red onion Enhances flavor complexity.
For the dressing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to roast the beets.
  2. Wash and trim the beets, wrapping each one in aluminum foil.
  3. Place on a baking sheet and roast for 45-60 minutes until fork-tender.
  4. Remove from oven and allow to cool slightly before peeling off the skins.
  5. Cut the beets into wedges or dice them to your preference.
Assembly
  1. In a large bowl, combine mixed greens, roasted beets, goat cheese, walnuts, cranberries, and red onion.
Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Taste and adjust seasoning as necessary.

Notes

For enhanced flavor, add feta cheese or substitute walnuts for pecans. Use firm, smooth-skinned beets for quality, or opt for pre-cooked beets to save time. Fresh herbs like dill or basil can brighten up the dish.
