For the Filling
  • 1/2 cup unsalted butter, softened Provides creaminess.

  • 1 cup powdered sugar Ensures a smooth filling.
  • 4 oz cream cheese (optional) For an extra rich filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter with granulated and brown sugars until light and fluffy.
  3. Crack the egg into the mixture and blend until creamy.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, and mix until just combined.
  6. Using a cookie scoop or two spoons, drop rounds of batter onto prepared baking sheets, leaving space between them.
Baking
  1. Bake for 10-12 minutes until edges are set and centers remain soft.
Filling
  1. While cookies cool, whip together softened butter and cream cheese (if using) with powdered sugar until smooth.
Assembly
  1. Spread a generous layer of filling on the flat side of one cooled cookie and cap with another cookie.

Notes

Make sure to use room-temperature ingredients for best results. Sift dry ingredients to avoid lumps and do not overmix the batter.
