Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, beat the softened butter with granulated and brown sugars until light and fluffy.
- Crack the egg into the mixture and blend until creamy.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, and mix until just combined.
- Using a cookie scoop or two spoons, drop rounds of batter onto prepared baking sheets, leaving space between them.
Baking
- Bake for 10-12 minutes until edges are set and centers remain soft.
Filling
- While cookies cool, whip together softened butter and cream cheese (if using) with powdered sugar until smooth.
Assembly
- Spread a generous layer of filling on the flat side of one cooled cookie and cap with another cookie.
Notes
Make sure to use room-temperature ingredients for best results. Sift dry ingredients to avoid lumps and do not overmix the batter.
