Ingredients
  

Main Ingredients
  • 4 cups Sweet watermelon, cubed The redder the better
  • 1 cup Fresh mint leaves Don’t skimp!
  • 1 small Cucumber, chunked For cool crunch
  • 2 tablespoons Lime juice Squeeze or two of lime
  • 1 pinch Salt
  • 1 pinch Black pepper Optional

Method
 

Preparation
  1. Plop all your ingredients into a blender.
  2. Add watermelon first for best blending.
  3. Then add mint, cucumber, salt, and black pepper if using.
  4. Squeeze in the lime juice.
  5. Blend until smooth and pretty.
  6. Taste and adjust salt or lime juice if needed.
  7. Chill for at least five minutes before serving or serve immediately.

Notes

Can be served in shot glasses for a fancy vibe or with a crumble of feta on top. Pair it with a colorful watermelon arugula salad.
