Watermelon Jello Snack

Ingredients
  

Main Ingredients
  • 1 large seedless watermelon (about 10-12 pounds)
  • 2 boxes watermelon flavored gelatin (3 ounces each)
  • 2 cups boiling water
  • 1 cup cold water
Optional Garnishes
  • to taste fresh mint leaves For garnish
  • to taste small gummy candies (watermelon flavored or assorted) Optional for extra fun

Method
 

Preparation
  1. Wash the watermelon under cold running water to remove any dirt or pesticides.
  2. Cut the watermelon in half lengthwise.
  3. Scoop out the watermelon flesh from both halves and save it in a bowl.
  4. Smooth the inside of your watermelon bowls with a spoon for a neat appearance.
  5. Pat the inside of the watermelon shells dry with paper towels.
  6. In a large mixing bowl, combine the watermelon flavored gelatin with boiling water and stir until dissolved.
  7. Stir in cold water to cool the mixture.
  8. Optional: Mix in gummy candies for added texture.
  9. Carefully pour the gelatin mixture into the watermelon halves.
  10. Refrigerate for at least 4-6 hours, or overnight for best results.
  11. Check if the gelatin is firm and fully set before serving.
  12. Cut into wedges for easier serving, if desired.
  13. Garnish with fresh mint leaves before serving.
  14. Serve and enjoy chilled!

Notes

Store leftovers in the refrigerator for up to 2-3 days. Freezing is not recommended.
