  • 4 cups fresh arugula Ensure arugula is fresh and crisp.
  • 1 cup Greek feta cheese, crumbled Creamy, crumbly feta works best.
  • 1 medium lemon, juiced For a sharp zing.
  • 3 tablespoons good olive oil Can substitute for lemon juice if desired.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon black pepper, cracked Add more for extra flavor.
Optional ingredients
  • 1 small red onion, thinly sliced Optional for extra flavor.
  • 0.25 cup fresh mint leaves, torn Optional for freshness.

Method
 

Preparation
  1. Lay arugula on your largest plate or salad bowl.
  2. Pile the watermelon cubes on top of the arugula.
  3. Crumble feta cheese generously over the top.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and cracked pepper.
  2. Pour the dressing over the salad.
  3. If using, add red onion and mint.
Serving
  1. Toss the salad gently to combine.
  2. Serve immediately and enjoy!

Notes

For healthier alternatives, use lower-fat cheese or skip the olive oil for more lemon juice. If you have leftovers, store in an airtight container but best enjoyed fresh.
