Preparation
  1. In a small bowl, mix the warm water and sugar, then add the yeast. Allow it to sit for about 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Gradually pour in the yeast mixture, mixing until a dough starts to form.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
Cooking
  1. Preheat your oven to 450°F (232°C) and prepare two baking sheets lined with parchment paper.
  2. In a large pot, bring 10 cups of water and baking soda to a rolling boil.
  3. Once risen, turn the dough out onto a floured surface and divide it into 1-inch pieces. Roll each piece into a ball.
  4. Carefully lower the pretzel bites into the boiling water using a slotted spoon, about 6-8 at a time. Boil for 30 seconds on each side, then remove and place them on the prepared sheets.
  5. Brush the tops of the pretzel bites with the beaten egg, sprinkling coarse sea salt on top. Bake for 12-15 minutes, or until golden brown.
  6. In a separate bowl, combine shredded cheese, softened cream cheese, and garlic powder. Heat until melted.
  7. Serve the pretzel bites drizzled with melted cheese or as a dip. Garnish with fresh parsley if desired.

Notes

These pretzel bites can be prepped in advance—just boil, freeze, and bake later for a spontaneous snack. For healthier swaps, try using whole wheat flour or a less fatty cheese.
