Method
 

Preparation
  1. In a large mixing bowl, combine the finely chopped walnuts, crushed shortbread cookies, cream cheese, powdered sugar, and vanilla extract.
  2. Mix with a spatula or your hands until well blended. The mixture should be thick and hold together.
Forming the Balls
  1. Take small portions of the mixture and roll them into balls about 1 inch in diameter.
Chilling
  1. Place the balls on a baking sheet lined with parchment paper and refrigerate for 30 minutes to firm them up.
Coating in Chocolate
  1. Melt dark chocolate until smooth.
  2. Dip each ball into the melted chocolate until fully coated and allow excess to drip off.
Finishing Touches
  1. Place chocolate-coated pralines back on parchment paper and sprinkle with cocoa powder or colorful sprinkles if desired.
Final Chill
  1. Return pralines to the refrigerator for another 30 minutes until chocolate sets completely.
