  • 1 block firm tofu Not silken; needs to be pressed to remove excess water.
  • 1/2 teaspoon turmeric For color and earthiness.
  • 2 tablespoons nutritional yeast Enhances cheesy umami flavor.
  • 1/2 teaspoon salt To taste.
  • 1/4 teaspoon black pepper To taste.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
Optional Add-ins
  • 1 cup spinach Add for a healthy boost.
  • 1 cup sautéed vegetables (e.g., peppers, tomatoes) Use whatever you have on hand.

Method
 

Preparation
  1. Quickly press the tofu to remove excess water. Alternatively, if you are in a hurry, this step can be skipped.
Cooking
  1. Crumble the pressed tofu into a nonstick pan with a little oil.
  2. Let it sizzle and cook over medium heat.
  3. Sprinkle in turmeric, nutritional yeast, salt, pepper, garlic powder, and onion powder while stirring.
  4. Add your choice of vegetables last to retain their color and texture.
  5. Keep everything moving in the pan to prevent sticking.
  6. Cook until the edges start to turn golden and the dish is aromatic.

Notes

This scramble can be customized with your favorite spices and veggies. Serve it in a tortilla, on toast, or as a grain bowl topping. For a healthier alternative, skip the oil and steam-sauté the ingredients.
