Preparation
- Preheat your oven to 180°C (350°F).
- Sieve the self-raising flour and baking soda into a large mixing bowl, and stir in the salt.
- In a separate bowl, whisk together the vegan butter, soft brown sugar, and vanilla extract until smooth and creamy.
- Using an electric whisk, whip the aquafaba for 5-10 minutes until it reaches fluffy stiff peaks.
- Gradually stir the creamy butter/sugar mixture into the whipped aquafaba until well combined.
- Gently fold in the dry flour mix.
- Pour the batter evenly into three greased and lined round cake tins.
- Bake for about 30 minutes or until a skewer inserted comes out clean.
Frosting and Decoration
- Prepare the caramel buttercream by creaming together dairy-free butter, icing sugar, brown sugar, water, and dairy-free cream.
- Add a sprinkle of sea salt to enhance the flavor.
- Once the cakes are cool, layer them with caramel buttercream in between each layer.
- Cover the entire cake with the remaining buttercream.
- Decorate the cake with chocolate buttons for eyes, black frosting, coconut shreds, and use vanilla pods as arms.
- Add red or orange frosting for the nose to bring your snowman to life.
Notes
For a deeper flavor, consider adding a hint of cinnamon or nutmeg into the cake mix. Allow cooling layers to prevent buttercream from melting.
