For the Cake
  • 800 g self-raising flour Creates a light and fluffy texture.

  • 400 g vegan butter Adds richness to the sponge.
  • 500 g soft brown sugar Imparts a deep sweetness with caramel undertones.
  • 200 ml aquafaba Acts as the egg substitute, providing moisture and fluffiness.
  • 1 tsp vanilla extract Introduces an aromatic dimension.
For the Frosting
  • 420 g dairy-free butter Essential for the creamy frosting.
  • 1000 g icing sugar Creates a sweet and smooth buttercream.
  • 1-2 tbsp plant milk Adjusts consistency, if needed.
  • 3 tbsp brown sugar Deepens the flavor of the caramel frosting.
  • 6 tbsp water Used to achieve the right frosting texture.
  • 3 tbsp dairy-free cream Adds creaminess to the buttercream.
  • A sprinkle of sea salt Balances the sweetness.
Decorations
  • a handful chocolate buttons Perfect for the snowman’s eyes.
  • Black frosting for the eyes Adds character to the snowman.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Sieve the self-raising flour and baking soda into a large mixing bowl, and stir in the salt.
  3. In a separate bowl, whisk together the vegan butter, soft brown sugar, and vanilla extract until smooth and creamy.
  4. Using an electric whisk, whip the aquafaba for 5-10 minutes until it reaches fluffy stiff peaks.
  5. Gradually stir the creamy butter/sugar mixture into the whipped aquafaba until well combined.
  6. Gently fold in the dry flour mix.
  7. Pour the batter evenly into three greased and lined round cake tins.
  8. Bake for about 30 minutes or until a skewer inserted comes out clean.
Frosting and Decoration
  1. Prepare the caramel buttercream by creaming together dairy-free butter, icing sugar, brown sugar, water, and dairy-free cream.
  2. Add a sprinkle of sea salt to enhance the flavor.
  3. Once the cakes are cool, layer them with caramel buttercream in between each layer.
  4. Cover the entire cake with the remaining buttercream.
  5. Decorate the cake with chocolate buttons for eyes, black frosting, coconut shreds, and use vanilla pods as arms.
  6. Add red or orange frosting for the nose to bring your snowman to life.

Notes

For a deeper flavor, consider adding a hint of cinnamon or nutmeg into the cake mix. Allow cooling layers to prevent buttercream from melting.
