Ingredients

  • 1 large head large head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons lemon juice (freshly squeezed)
  • Zest of 1 lemon
  • 2 tablespoons maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
Roasting
  1. In a large bowl, combine the cauliflower florets with olive oil, sea salt, and black pepper. Toss well until all florets are evenly coated.
  2. Spread the seasoned cauliflower evenly onto the prepared baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, flipping halfway through.
  3. Once golden brown and tender, remove the cauliflower from the oven.
Making the Glaze
  1. In a small bowl, mix together the freshly squeezed lemon juice, lemon zest, maple syrup, garlic powder, and onion powder until well combined.
Finishing Touches
  1. Drizzle the lemon pepper glaze over the hot cauliflower and toss gently to coat all florets.
  2. Return the glazed cauliflower to the oven for an additional 5-7 minutes to caramelize the glaze.
  3. Remove from the oven and transfer to a serving dish. Garnish with freshly chopped parsley.
