Ingredients
  

For the Tart Crust
  • 330 g all-purpose flour
  • 165 g softened butter at room temperature
  • 1 medium egg
  • 2 small egg yolks
  • 130 g sugar
  • 1 packet vanilla sugar or 1 tablespoon of vanilla extract or the seeds of 1 vanilla pod
  • 1 teaspoon baking powder
  • a pinch of salt
For the Filling
  • 400 g strawberry, raspberry, or berry jam
For the Topping
  • 1 egg white for brushing
  • 2 tablespoons granulated sugar for sprinkling

Method
 

Preparation of the Crust
  1. In a mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
  2. Add the softened butter, egg, and egg yolks, then blend until a cohesive dough forms.
  3. Wrap the dough in plastic wrap and chill in the refrigerator for at least 2 hours.
Preparing the Tart Pan
  1. Grease and flour a removable-bottom tart pan thoroughly.
Assembling the Tart
  1. Roll out the chilled dough on a floured work surface to about 4-5 mm thickness.
  2. Place the rolled-out dough into the tart pan, ensuring it fits snugly into the corners.
  3. Trim any excess dough around the rim and prick the bottom with a fork.
  4. Spread your chosen jam over the tart base, leaving about a half-centimeter border.
  5. Chill the tart in the refrigerator while preparing the heart shapes.
Decorating with Heart Shapes
  1. Using cookie cutters, cut out heart shapes from the remaining dough and keep them in the fridge.
  2. Arrange the chilled heart shapes over the jam layer, leaving space between each heart.
Baking the Tart
  1. Return the tart to the fridge for about 30 minutes to set.
  2. Preheat the oven to 175°C (350°F).
  3. Brush the hearts and edges of the tart with beaten egg white, then sprinkle with granulated sugar.
  4. Bake in the preheated oven for about 40 to 45 minutes, rotating halfway through.
  5. Allow the tart to cool in the pan for 2 to 3 hours before slicing.

Notes

For added flavor, you can incorporate cinnamon in the dough or drizzle melted chocolate on top before serving. Personalize with fresh fruits or edible flowers for decoration.
