  1. Heat 2 tablespoons of olive oil in a skillet over medium heat until shimmering.
  2. Add the finely chopped onion and sauté for 4-5 minutes until softened and translucent.
  3. Toss in the minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the sun-dried tomatoes and toast for 1-2 minutes to intensify the flavor.
  5. Pour in the broth and bring to a gentle simmer, scraping any bits from the bottom.
  6. Add the heavy cream or coconut cream, stirring until well combined.
  7. Allow the sauce to simmer for an additional 3-5 minutes to reduce and thicken slightly.
  8. Introduce the butter beans, stirring gently to coat. Let simmer for 8-10 minutes.
  9. Mix in the Parmesan or nutritional yeast, waiting until melted.
  10. Stir in the fresh basil and any optional greens until just wilted.
  11. Remove from heat and let dish rest for a few minutes to thicken naturally.
