  • 1/2 small red onion Milder flavor for the soup.
  • 1 clove garlic Fresh garlic enhances flavor.
  • 1 tablespoon olive oil A splash for richness.
  • 1 tablespoon vinegar A drizzle for acidity.
  • to taste salt Season according to preference.

Method
 

Preparation
  1. Roughly chop the tomatoes, peaches, cucumber, and onion.
  2. Toss everything in a blender.
  3. Add the piece of bread, olive oil, vinegar, garlic, salt, and pepper.
  4. Blend until smooth or chunky as per your preference.
  5. Taste and adjust seasoning if necessary.
  6. Pour into a jug and refrigerate for at least 1 hour before serving.

Notes

Tomato Peach Gazpacho tastes best when chilled and can be made ahead of time. Add yogurt or feta for a creamier texture. Garnish with fresh basil or mint leaves for added flavor.
