  • 2 large red bell peppers Sweet and vibrant.

  • 2 tbsp olive oil A smooth and healthy fat.
  • 2 tbsp lemon juice (freshly squeezed) Adds zesty brightness.
  • to taste salt and pepper Essential seasonings.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the red bell peppers into strips and toss them with olive oil, salt, and pepper. Spread on a baking sheet.
Roasting and Blending
  1. Roast the peppers in the preheated oven for about 20 minutes until softened and slightly charred.
  2. Let the roasted peppers cool slightly, then blend them with garlic and lemon juice until smooth.
Cooking the Fish
  1. Heat a drizzle of olive oil in a skillet over medium heat and cook tilapia fillets for 3-4 minutes on each side until golden and flaking.
  2. Pour the roasted pepper sauce over the fillets and simmer for another minute before serving.

Notes

Marinate the tilapia in olive oil, minced garlic, and lemon juice for 30 minutes for enhanced flavor. Optional: Add fresh herbs or feta cheese for more taste.
