Preparation
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. In a blender, combine the roasted red peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
  3. Pour half of the roasted pepper sauce into the greased baking dish, spreading it evenly across the bottom.
  4. Place the tilapia fillets on top of the sauce.
  5. Generously spoon the remaining sauce over the fillets.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
  2. Garnish with fresh basil or parsley before serving.

Notes

For an extra layer of flavor, try adding a pinch of red pepper flakes to the sauce. Consider including sliced olives or capers in the sauce for a briny contrast. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
