Preparation
- Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
- In a blender, combine the roasted red peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until smooth.
- Pour half of the roasted pepper sauce into the greased baking dish, spreading it evenly across the bottom.
- Place the tilapia fillets on top of the sauce.
- Generously spoon the remaining sauce over the fillets.
Cooking
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.
- Garnish with fresh basil or parsley before serving.
Notes
For an extra layer of flavor, try adding a pinch of red pepper flakes to the sauce. Consider including sliced olives or capers in the sauce for a briny contrast. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
