Ingredients
  

For the filling
  • 300 g ground beef lean or medium fat
  • 2-3 cloves garlic, minced for aromatic warmth
  • 1 red chili or 1 tsp chili flakes adjust to taste for heat
  • 2 tbsp soy sauce use gluten-free for GF option
  • 1 tsp fish sauce for oceanic salinity
  • 1 pinch sugar optional, balances flavors
  • 2 green onions, thinly sliced for gentle onion bite
  • 1 handful fresh Thai basil leaves, chopped the star of the dish
For assembly
  • 12 spring roll wrappers or lettuce leaves/rice paper for alternatives
  • 1-2 cups vegetable oil for frying ensures crispy texture

Method
 

Preparation
  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Once hot, add the minced garlic and chopped chili. Sauté for about 30 seconds until fragrant.
  2. Add the ground beef, breaking it apart with a spatula. Cook until browned, allowing the meat to caramelize.
  3. Stir in soy sauce, fish sauce, and a pinch of sugar (if using). Toss in green onions and cook for another 2 minutes, then fold in chopped Thai basil leaves.
Assembly
  1. Take a spring roll wrapper and place it flat. Spoon 2 tablespoons of the beef mixture near the bottom edge. Fold the bottom edge up over the filling, tuck in the sides tightly, and roll upwards to seal using a little water.
Cooking
  1. In a frying pan, heat enough vegetable oil to cover the rolls halfway. Once hot, place the rolls seam side down. Fry for about 2-3 minutes on each side until golden brown.
Serving
  1. Remove the rolls and drain on paper towels. Serve hot for best texture and flavor.
