  • 2 tablespoons Olive oil Or your favorite pan greaser.
Seasoning
  • to taste Salt Adjust according to preference.
  • to taste Pepper
  • 1 teaspoon Smoked paprika Add more if desired.

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add sweet potatoes in a single layer and sprinkle with salt and pepper.
  3. Cook for about 10-12 minutes until fork-tender and golden, tossing in the onions and garlic halfway through.
  4. Once the potatoes are tender, create wells in the skillet and crack the eggs into the holes.
  5. Cover the pan and cook until the eggs are set to your liking.
  6. Finish with smoked paprika and any additional herbs or hot sauce if desired.

Notes

For meal prep, this dish stores well in the fridge for up to three days. Reheat on low with a splash of water to avoid drying out. Customize with your favorite add-ins like spinach, peppers, or leftover sausage.
