Dressing

Method
 

Preparation
  1. Wash, core, and thinly slice the apples. Toss them gently with lemon juice.
  2. In a dry skillet over medium heat, toast walnuts for about 5 minutes until golden brown.
  3. In a large bowl, fluff the mixed salad greens with your hands.
  4. Layer apple slices, cranberries, and walnuts over the greens; sprinkle feta and onions on top.
  5. In a small bowl, whisk honey, olive oil, salt, and pepper until smooth.
  6. Just before serving, pour dressing over the salad, toss gently, and serve immediate.

Notes

For variations, use yogurt dressing, substitute walnuts with pecans or almonds, and add roasted sweet potatoes or quinoa. To make it vegan, omit feta and include avocado.
