  • 4 medium-sized medium-sized beets (about 1.5 pounds) Fresh, firm beets with vibrant skin.
  • 3 tablespoons brown sugar For that perfect touch of sweetness.
  • 2 tablespoons olive oil Adds richness and helps the beets roast beautifully.
  • 1 teaspoon sea salt Enhances all the flavors.
  • 1/2 teaspoon freshly ground black pepper Adds a little spice to the mix.
  • 1 teaspoon fresh thyme leaves (optional) A fragrant herb that elevates the dish.
  • 1 tablespoon balsamic vinegar (optional) Adds depth and tanginess to the flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Carefully peel the beets using a vegetable peeler, then cut them into uniform 1-inch cubes.
  4. In a large bowl, combine the beet cubes with olive oil, brown sugar, sea salt, and black pepper; toss to coat.
  5. Spread the coated beets on the baking sheet in a single layer.
Cooking
  1. Roast in the oven for 35–40 minutes, stirring halfway through, until the beets are tender and slightly caramelized.
  2. Once out of the oven, let the roasted beets cool for a few minutes. Taste and adjust seasoning if necessary. Serve warm or at room temperature.

Notes

To elevate your dish, add crumbled feta cheese or goat cheese just before serving, or toss in chopped walnuts for a crunchy texture. Smoked sea salt can also add a unique taste. If unsure about peeling, use a paper towel to rub off the skins after roasting.
