Preparation
- Begin by rinsing all the fruits under cold water and patting them dry.
- Hull and quarter the strawberries, dice the mango, and slice the kiwi. Combine the strawberries, blueberries, mango, and kiwi in a mixing bowl.
Create a honey glaze
- Add 1 tablespoon of honey and 1 teaspoon of lemon zest to the mixed fruits. Gently toss the fruits to ensure an even coating, and let them sit for about 5 minutes.
Mix the yogurt
- In a separate medium bowl, combine 2 cups of Greek yogurt with the remaining 2 tablespoons of honey and 1 teaspoon of vanilla extract. Whisk until smooth.
Layer the parfaits
- Divide the yogurt evenly among four clear glasses, about 1/4 cup of yogurt to each glass.
- Top each layer with a spoonful of honey-glazed fruit.
Repeat layering
- Add another layer of yogurt, then more fruit, and sprinkle with granola, toasted almonds, and chia seeds.
Garnish
- Drizzle honey over each parfait and add a pinch of lemon zest. Finish with a sprig of fresh mint leaves.
Chill and serve
- Cover the parfaits with plastic wrap and refrigerate for at least 10 minutes to allow flavors to meld.
- Serve chilled and enjoy.
Notes
