Ingredients
  

For the fruit layer

For the yogurt layer

For the toppings

Method
 

Preparation
  1. Begin by rinsing all the fruits under cold water and patting them dry.
  2. Hull and quarter the strawberries, dice the mango, and slice the kiwi. Combine the strawberries, blueberries, mango, and kiwi in a mixing bowl.
Create a honey glaze
  1. Add 1 tablespoon of honey and 1 teaspoon of lemon zest to the mixed fruits. Gently toss the fruits to ensure an even coating, and let them sit for about 5 minutes.
Mix the yogurt
  1. In a separate medium bowl, combine 2 cups of Greek yogurt with the remaining 2 tablespoons of honey and 1 teaspoon of vanilla extract. Whisk until smooth.
Layer the parfaits
  1. Divide the yogurt evenly among four clear glasses, about 1/4 cup of yogurt to each glass.
  2. Top each layer with a spoonful of honey-glazed fruit.
Repeat layering
  1. Add another layer of yogurt, then more fruit, and sprinkle with granola, toasted almonds, and chia seeds.
Garnish
  1. Drizzle honey over each parfait and add a pinch of lemon zest. Finish with a sprig of fresh mint leaves.
Chill and serve
