Method
 

Preparation
  1. Begin by preheating a skillet or griddle over medium heat.
  2. Spread the softened butter evenly on one side of each slice of sourdough bread.
  3. On the unbuttered side of two slices of bread, layer half of the shredded Gouda cheese evenly across each slice.
  4. On top of the Gouda, add an equal amount of the chopped sun-dried tomatoes.
  5. Spread a generous layer of basil pesto over the tomatoes.
  6. Top each slice of the sandwich with the remaining Gouda cheese, then place the second slice of bread on top, buttered side facing out.
Cooking
  1. Carefully place the assembled sandwiches onto the preheated skillet.
  2. Cook them for about 4-5 minutes or until the bread turns golden brown and crispy.
  3. Flip the sandwiches carefully using a spatula, pressing down slightly, and cook for an additional 4-5 minutes on the other side.
  4. Once done, remove the sandwiches from the skillet and let them cool for a minute before slicing them in half.
