Preparation
- Begin by preheating a skillet or griddle over medium heat.
- Spread the softened butter evenly on one side of each slice of sourdough bread.
- On the unbuttered side of two slices of bread, layer half of the shredded Gouda cheese evenly across each slice.
- On top of the Gouda, add an equal amount of the chopped sun-dried tomatoes.
- Spread a generous layer of basil pesto over the tomatoes.
- Top each slice of the sandwich with the remaining Gouda cheese, then place the second slice of bread on top, buttered side facing out.
Cooking
- Carefully place the assembled sandwiches onto the preheated skillet.
- Cook them for about 4-5 minutes or until the bread turns golden brown and crispy.
- Flip the sandwiches carefully using a spatula, pressing down slightly, and cook for an additional 4-5 minutes on the other side.
- Once done, remove the sandwiches from the skillet and let them cool for a minute before slicing them in half.
- Serve warm, savoring the delicious combination of flavors.
