Wrap Ingredients
  • 2 pieces Soft tortillas or flatbreads Use whole wheat or spinach wraps for healthier alternatives.
  • 1 cup Hummus Roasted red pepper hummus for a spicy kick.
  • 1 cup Shredded carrots Adds crunch and color.
  • 1 cup Sliced cucumbers Can be pat dried to avoid sogginess.
  • 1 cup Sliced bell peppers Bright red bell peppers recommended.
  • 1 cup Fresh spinach leaves Optional, but great for adding nutrients.
  • 1 slice Lemon For a squeeze of freshness, optional.

Method
 

Preparation
  1. Lay out your tortillas or flatbreads on a flat surface.
  2. Spread a thick layer of hummus on each tortilla, almost to the edges.
  3. Stack the shredded carrots, sliced cucumbers, sliced bell peppers, and fresh spinach leaves on top of the hummus.
  4. Roll the wrap tightly, tucking in the ends as you go to prevent spillage.
  5. Slice the wrapped tortilla in half and enjoy your delicious summer veggie wrap.

Notes

Store leftovers by wrapping extras in plastic or foil and refrigerating. Keep wrapping and filling separate for freshness. Ideal for picnics or quick meals.
