Ingredients
  

Main Ingredients
  • 1 lb chicken thighs (or breasts) Use thighs for juiciness.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fresh basil, chopped Add half during cooking, reserve half for serving.
  • 1 can coconut milk
  • 2 medium tomatoes, chopped
  • 1 medium bell pepper, chopped
  • 1 lime squeezed juice For brightness.
  • 2 cups random leftover veggies (optional) e.g., carrots, corn, zucchini.
  • 1 tbsp olive oil For sautéing.
  • to taste salt and pepper

Method
 

Preparation
  1. Warm olive oil in a pot over medium heat.
  2. Add onions and bell peppers, sauté until soft.
  3. Stir in minced garlic and cook for an additional minute.
Cooking
  1. Add chicken to the pot and season with salt and pepper. Brown the chicken, turning occasionally.
  2. Add chopped tomatoes, coconut milk, and half the fresh basil.
  3. Reduce heat and let simmer until the chicken is cooked through and tender.
  4. Adjust seasonings with lime juice and remaining basil before serving.

Notes

Serve with extra basil on top and pair with crispy flatbread, jasmine rice, or quinoa.
