Preparation
  1. Preheat the oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add in the egg and vanilla extract, mixing until well combined.
  5. Mix in the sour cream until smooth and creamy.
  6. Gradually fold in the dry mixture into the wet mixture until a cookie dough forms.
  7. Fold in the chopped gumdrops, ensuring they’re evenly distributed.
  8. Roll tablespoon-sized portions of the dough into balls and roll in the granulated sugar.
  9. Place dough balls on the prepared baking sheets with enough space in between.
Baking
  1. Bake for 10-12 minutes until the edges are lightly golden.
  2. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

Use room temperature butter for the best incorporation. You can adjust the cookie ball sizes and baking times to your preference. For a festive touch, roll cookies in colored sugar or add chocolate chips or nuts for variations.
