Preparation
- Preheat the oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- Mix in the sour cream until smooth and creamy.
- Gradually fold in the dry mixture into the wet mixture until a cookie dough forms.
- Fold in the chopped gumdrops, ensuring they’re evenly distributed.
- Roll tablespoon-sized portions of the dough into balls and roll in the granulated sugar.
- Place dough balls on the prepared baking sheets with enough space in between.
Baking
- Bake for 10-12 minutes until the edges are lightly golden.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.
Notes
Use room temperature butter for the best incorporation. You can adjust the cookie ball sizes and baking times to your preference. For a festive touch, roll cookies in colored sugar or add chocolate chips or nuts for variations.
