Preparation
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar in a large bowl until the mixture is light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually incorporate this mixture into the wet blend, stirring until fully combined.
- Take small portions of the dough, flatten them, place a dollop of strawberry jam in the center, fold the dough over, and roll it into a ball.
- Arrange the cookie balls on a baking sheet lined with parchment paper, spaced about 2 inches apart. Press down gently and add sprinkles on top.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden and the center looks set.
- Let the cookies cool before serving. Optionally, drizzle icing made from powdered sugar over the cookies.
Notes
Chill the dough for about 30 minutes for thicker cookies. Experiment with different jam flavors and use themed sprinkles for holidays.
