Preparation
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using), and beat until well combined.
- Mix in the strawberry gelatin powder until evenly incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until a soft dough forms.
- If the dough feels too soft or sticky, add 1-2 tablespoons more flour.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Chill the dough balls for at least 1 hour.
Baking
- Bake for 11-13 minutes, until edges are set and centers remain slightly soft.
- Let sit for 2 minutes, then gently press a chocolate kiss into the center of each cookie.
- Transfer cookies to a wire rack to cool completely.
- Before serving, dust with powdered sugar.
Notes
Chilling the dough is crucial for the perfect texture. You can experiment with different flavored gelatin mixes for a twist. Store cookies in an airtight container for up to one week, or freeze for up to three months.
