Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  3. Add the egg, vanilla extract, and almond extract (if using), and beat until well combined.
  4. Mix in the strawberry gelatin powder until evenly incorporated.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until a soft dough forms.
  6. If the dough feels too soft or sticky, add 1-2 tablespoons more flour.
  7. Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  8. Chill the dough balls for at least 1 hour.
Baking
  1. Bake for 11-13 minutes, until edges are set and centers remain slightly soft.
  2. Let sit for 2 minutes, then gently press a chocolate kiss into the center of each cookie.
  3. Transfer cookies to a wire rack to cool completely.
  4. Before serving, dust with powdered sugar.
