Ingredients

For the roll-ups
  • 10 oz soft flour tortillas about 6 small tortillas
  • 6 oz cream cheese, softened rich and creamy, adds a luxurious texture
  • 0.5 cup powdered sugar sweet and fine for a luscious filling
  • 1 tsp pure vanilla extract enhances the overall flavor
  • 1.5 cup fresh strawberries, diced sweet, juicy, and vibrant
  • 0.5 tsp finely grated lemon zest optional, brightens the flavors
  • 0.13 tsp fine salt balances the sweetness
  • 3 tbsp unsalted butter, melted adds richness
  • 0.25 cup granulated sugar (for coating) provides a crisp layer
  • 1 tsp ground cinnamon (for coating) creates a comforting aroma

Method

Preparation
  1. Gather all your ingredients and dice the strawberries into small, bite-sized pieces. Set aside.
Mix the Cream Cheese Filling
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, pure vanilla extract, and a pinch of salt. Mix until smooth. If using, add the finely grated lemon zest and mix again.
Spread and Fill the Tortillas
  1. Spread a generous layer of the cream cheese mixture evenly across each tortilla. Leave a small border at the edges. Sprinkle diced strawberries over the cream cheese.
Roll Them Up
  1. Gently roll the tortilla from one end to the other, keeping the filling snugly inside. Repeat for all tortillas and place seam-side down on a plate.
Melt the Butter
  1. Melt the unsalted butter in a small bowl. Using a brush, coat each roll-up lightly with butter.
Coat with Sugar and Cinnamon
  1. Mix together the granulated sugar and ground cinnamon in a bowl. Roll each buttered tortilla in this mixture for an even coating.
Final Touch
  1. Optionally, lightly pan-fry the coated roll-ups in a skillet over medium heat for a couple of minutes until crispy and golden-brown.
Slice and Serve
  1. After cooling slightly, slice each roll-up into bite-sized pieces and arrange on a serving platter.

Notes

Serve as a delightful dessert, at brunch, or on picnics. Pair with whipped cream or chocolate sauce for indulgence. Avoid overfilling and use softened cream cheese for best results.
