Preparation
  1. Preheat your oven to 350 °F (175 °C) and prepare a baking sheet by lining it with parchment paper or greasing it.
  2. In a blender, combine the cottage cheese, eggs, vanilla extract, milk, maple syrup, and melted butter. Blend until smooth.
  3. In a separate bowl, whisk together the flour and baking powder until well combined.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined. Fold in the finely diced strawberries.
  5. Using a spoon, scoop rounded tablespoons of the mixture onto the prepared baking sheet.
Baking
  1. Bake in the preheated oven for about 20 minutes, or until lightly golden on top and a toothpick comes out clean.
  2. Let the bites cool slightly on the baking sheet before serving. Drizzle with additional maple syrup if desired.

Notes

For an extra burst of flavor, consider adding a teaspoon of lemon zest. Other fruits or nuts can also be added for variations. These bites can be stored in an airtight container in the refrigerator for 3-4 days.
