Preparation
- Toss all the strawberries in your blender with the basil leaves.
- Squeeze in the lemon juice, drizzle your favorite sweetener, and add a little water.
- Start blending on low, then increase the speed until smooth.
- Taste the mixture; if it’s too thick, add more water. If it's too tart, add more honey.
- For an extra cold treat, chill in the refrigerator for about 15 minutes, if time allows.
- Spoon the soup into bowls and garnish with a basil leaf or swirl of yogurt if desired.
Notes
If you have leftovers, keep in a tightly covered container in the fridge for a couple of days. Stir before serving, as it may separate.
