Preparation
  1. Cook the noodles according to package instructions. Bring a pot of salted water to a boil and add the noodles. Stir occasionally until they are tender yet firm, usually about 3-5 minutes for egg noodles or 5-7 minutes for rice noodles. Once cooked, drain and set aside.
  2. In a pan, heat vegetable oil over medium heat. Wait until the oil shimmers.
  3. Add the sliced chicken and cook until no longer pink, about 5-7 minutes, stirring occasionally.
  4. Stir in minced garlic and cook for 1 more minute, taking care to prevent burning.
  5. Add soy sauce and honey, stirring to combine. The mixture will bubble gently.
  6. Toss in the cooked noodles and mix until well coated.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions.

Notes

For a healthier twist, consider using skinless chicken thighs instead of breasts. You can also swap regular soy sauce for a low-sodium option. For a veggie-packed version, add bell peppers, broccoli, or snap peas during cooking.
