Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and sauté the diced onion until translucent.
  4. Add the chopped spinach and cook until wilted.
Cooking
  1. Pour the egg mixture into the skillet and gently stir to combine.
  2. Sprinkle the crumbled feta cheese on top.
  3. Cook for a few minutes on the stove until the edges start to set.
  4. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden.

Notes

For a lighter version, substitute whole eggs with egg whites or a combination of eggs and egg whites. Consider adding vegetables like bell peppers, zucchini, or mushrooms for added flavor. This frittata can be made in advance and stored in the refrigerator for up to three days.
