Ingredients
  

Seafood and Sausages
  • 12–14 medium medium shrimp, peeled and deveined
  • 2 links jalapeño cheddar sausages, sliced
Eggs
  • 2 soft-boiled eggs (6–7 minutes, peeled and halved)
Vegetables
  • 1 slice jalapeño, sliced
  • 2 tbsp green onions, chopped
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • ¼ cup red bell pepper, diced
Spices and Seasonings
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • Salt and pepper to taste
Fats and Oils
  • 1 tbsp butter
  • 1 tbsp oil
Liquids
  • 3 cups chicken broth
  • 1 cup milk or half & half
  • 1 tsp soy sauce
  • 1 tsp chili oil (optional)
Cheeses
  • ½ cup shredded cheddar cheese
  • 2 tbsp cream cheese
Noodles
  • 1 block ramen noodle (or 2 for larger portions)

Method
 

Preparation
  1. In a bowl, combine shrimp with paprika, Cajun seasoning, garlic powder, chili powder, and salt and pepper. Toss to ensure all the shrimp are evenly coated.
  2. Heat oil in a large skillet over medium heat. Sear the seasoned shrimp for about 2 minutes on each side until they turn pink and slightly charred. Remove from skillet and set aside.
  3. In the same skillet, add sliced jalapeño cheddar sausage and cook until browned, about 3-4 minutes. Remove and set aside with shrimp.
Cooking
  1. In a large pot, melt butter over medium heat. Add minced garlic, diced onion, and red bell pepper. Sauté until fragrant and onion is soft.
  2. Pour in chicken broth and soy sauce. Bring to a gentle simmer. After a few minutes, stir in milk, cream cheese, and cheddar cheese, allowing cheese to melt.
  3. Add ramen noodles directly into pot. Cook for about 3 minutes until tender and coated with sauce.
  4. Carefully return shrimp and sausage into the pot. Stir gently to combine.
  5. Top with soft-boiled eggs, sliced jalapeño, and green onions. Serve hot, garnishing with chili oil if desired.

Notes

For added texture, top with bean sprouts or sesame seeds. Adjust the spice level by marinating shrimp in hot sauce. You can also use pepper jack cheese for extra zing.
