  • 1/2 tsp garlic powder Adds aromatic depth.
  • to taste salt and freshly ground black pepper Essential for flavor enhancement.
  • 2 tbsp olive oil For searing chicken.
  • 2 tbsp fresh cilantro (optional) For a fresh garnish.

Method
 

Preparation
  1. Pat the chicken thighs dry with a paper towel. In a mixing bowl, toss with smoked paprika, garlic powder, salt, and pepper. Allow to rest for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown, about 5-6 minutes per side. Remove from pan.
Cooking
  1. In the same skillet, lower heat and add BBQ sauce, ranch dressing, and hot sauce. Stir and simmer for 3-4 minutes.
  2. Return seared chicken to the pan, ensuring each piece is coated. Simmer for another 2 minutes.
  3. In a baking dish, layer tortillas, saucy chicken, and shredded cheddar. Repeat layers, ending with cheese on top.
  4. Cover with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake for an additional 5-10 minutes until cheese is golden.
  5. Let rest for 5 minutes, garnish with cilantro, slice, and serve warm.

Notes

For extra flavor, marinate chicken overnight with spices. Use rotisserie chicken for quicker prep. Feel free to add jalapeños or black beans for added texture and flavor. Corn tortillas can be used as a gluten-free option.
