- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and bell pepper, sautéing until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase heat to medium-high and add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.
- Stir in the rice, diced tomatoes, beef broth, chili powder, cumin, paprika, and salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes until the rice is tender.
- Remove from heat and let it sit covered for another 5 minutes. Fluff with a fork.
- Garnish with fresh cilantro before serving.
Notes
For variations, consider adding diced jalapeños or lime juice. This dish also works well in burritos or stuffed peppers. Feel free to use ground turkey or brown rice for healthier options.
