For the Marinade
  • 2 tablespoons Canola Oil (or vegetable oil) Provides a neutral taste.

  • 1/4 cup Soy Sauce (reduced-sodium) Enhances the fish’s natural taste.
  • 1 tablespoon Sesame Oil Adds nutty flavor, omit if allergic.
  • 1 tablespoon Fish Sauce (optional) Enhances flavor depth.
For the Fish and Garnish
  • 1 whole New Zealand Sea Bream Cleaned and scaled.
  • 1 Lime for slices and serving Adds acidity.
  • 1/4 cup Fresh Cilantro Garnish for freshness.
  • 2 stalks Green Onions Sliced for crunch.
  • 2 Fresno Chilies (optional) For a spicy kick.

Method
 

Preparation
  1. Preheat the oven to 425ºF (220ºC).
  2. Score the fish by making three parallel 2-inch slashes on each side.
  3. Rub the fish with canola oil to coat all surfaces.
  4. In a bowl, mix together chopped cilantro, minced garlic, ginger, sesame oil, soy sauce, and fish sauce (if using). Season with salt and white pepper.
  5. Coat the fish thoroughly with the marinade, covering all sides and the cavity.
  6. Insert lime slices into the cavity of the fish.
Cooking
  1. Bake on a baking sheet for 28-30 minutes until flaky and fully cooked.
  2. Garnish with fresh cilantro, sliced green onions, and Fresno chilies before serving.

Notes

For the best flavor, ensure fresh fish and consider marinating for a couple of hours. Use a meat thermometer to check doneness; internal temperature should reach 145ºF (63ºC).
