Method
Make the Dough
- In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt until well-incorporated.
- In a large bowl, cream the softened butter and brown sugar together until light and fluffy.
- Beat in the egg, molasses, and vanilla extract, mixing until smooth.
- Gradually mix in the dry ingredient mixture until everything is well combined.
Chill the Dough
- Divide the dough into two portions and wrap each in plastic wrap.
- Refrigerate for at least 1 hour.
Roll and Cut the Cookies
- Preheat your oven to 350°F (175°C).
- Take the chilled dough out and roll it onto a floured surface to about 1/4-inch thickness.
- Use cookie cutters to shape them into gingerbread men or any fun shape you fancy.
Bake the Cookies
- Place the cut-out cookies on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes or until they slightly puff up and turn lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Decorate the Cookies
- Once cookies have cooled, decorate with royal icing, sprinkles, colored sugar, and mini chocolate chips.

Notes
If the dough is too sticky, sprinkle flour on your surface and rolling pin. Prepare the dough a day in advance and store it in the fridge. It can also be frozen for a month.
