Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt.
  3. In a larger bowl, cream together the softened unsalted butter and packed brown sugar until light and fluffy.
  4. Beat in the molasses, egg, and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing gently just until combined.
  6. Chill the dough in the fridge for at least 30 minutes.
  7. Roll the chilled dough into 1-inch balls and coat each one in granulated sugar.
  8. Place the sugared dough balls on the baking sheets, flattening each slightly.
  9. Bake in the preheated oven for 8-10 minutes, or until the edges are firm. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
