S’mores Cookie Bars

Ingredients
  

For the Cookie Base
  • 2 cups graham cracker crumbs
  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar Packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
For the Filling
  • 2 cups chocolate chips The more, the merrier!
  • 2 cups mini marshmallows Can use regular size

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a rectangular baking dish with butter or nonstick spray.
  3. In a bowl, combine softened butter, brown sugar, white sugar, eggs, and vanilla extract until smooth.
  4. Mix in the graham cracker crumbs, flour and baking soda until just combined.
  5. Pat half of the dough into the bottom of the prepared baking dish.
  6. Layer the chocolate chips evenly over the dough, then spread the marshmallows on top.
  7. Dollop the remaining dough over the marshmallows.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until golden and marshmallows are puffed.
  2. Allow to cool before cutting into squares.

Notes

For best results, don't overbake the bars to avoid dryness. Allow to cool properly before slicing.
