For the Chicken
  • 6 pieces boneless, skinless chicken thighs Tender and flavorful, perfect for absorbing the sauce.

For the Sauce
  • 1 cup ketchup The base of our sweet barbecue sauce.
  • ¼ cup honey Provides that irresistible sweetness.
  • 2 tablespoons apple cider vinegar For a touch of acidity and tang.
  • 1 tablespoon Worcestershire sauce A unique flavor enhancer.
  • 2 teaspoons smoked paprika Imparts a beautiful smokiness.
  • ½ teaspoon liquid smoke For that authentic BBQ flavor.
  • ½ teaspoon ground cumin Adds warmth and earthiness.
  • to taste salt and freshly ground black pepper Essential for seasoning.

Method
 

Preparation
  1. Pat the chicken thighs dry before seasoning them with salt, pepper, smoked paprika, and ground cumin.
  2. Heat olive oil in a skillet over medium-high heat and sear the seasoned chicken thighs for 3-4 minutes on each side until golden-brown.
  3. In a mixing bowl, combine ketchup, honey, apple cider vinegar, Worcestershire sauce, liquid smoke, and smoked paprika. Stir until well blended.
  4. Sauté the diced onion and minced garlic in the same skillet for 2-3 minutes until fragrant and translucent.
Cooking
  1. Place the sautéed onion and garlic at the bottom of the Crock Pot. Arrange the seared chicken thighs on top and pour the prepared sauce evenly over them.
  2. Cover and set the Crock Pot to cook on LOW for 4-5 hours or HIGH for 2-3 hours.
  3. Once cooked, preheat the broiler, transfer the chicken to a baking sheet, spoon some sauce over it, and broil for 2-3 minutes for a caramelized finish.
  4. Allow the chicken to rest for 5 minutes before serving. Garnish with chopped cilantro if desired.

Notes

Searing enhances the flavor and texture. Adjust the sweetness by varying honey, and make it spicy with cayenne pepper or jalapeños. Ensure ingredients are cool to avoid cooking interruptions.
