Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
Cooking
  1. In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant.
  2. In a large bowl, combine the ground beef, smoky BBQ sauce, breadcrumbs, sautéed onion, salt, and pepper. Mix until well combined.
  3. Generously stuff each bell pepper with the meat mixture, pressing down gently to pack it in.
  4. Sprinkle shredded cheese on top of each filled pepper.
  5. Pour a little water into the bottom of the baking dish to help steam the peppers.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and the meat is cooked through.
