Preparation
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
Cooking
- In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant.
- In a large bowl, combine the ground beef, smoky BBQ sauce, breadcrumbs, sautéed onion, salt, and pepper. Mix until well combined.
- Generously stuff each bell pepper with the meat mixture, pressing down gently to pack it in.
- Sprinkle shredded cheese on top of each filled pepper.
- Pour a little water into the bottom of the baking dish to help steam the peppers.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and the meat is cooked through.
