  • 1 pound flank steak The hero of the dish, tender and juicy.
  • 1/4 cup cornstarch This will give the beef a luxurious coating.
  • 3 tablespoons olive oil Divided for cooking the beef.
  • 1 small bunch scallions Green parts only, cut into 1" pieces.
  • 1/3 cup brown sugar Packed for a deep, caramelized sweetness.
  • 3 cloves garlic Minced for infusion.
  • 1/4 teaspoon crushed red pepper flakes Optional, for a hint of heat.
  • 1 teaspoon grated fresh ginger Provides a refreshing zing.
  • 1/3 cup low sodium soy sauce The foundation of the sauce.
  • 1/3 cup water To adjust the consistency of the sauce.

Method
 

Preparation
  1. Slice the flank steak against the grain into 1/4" thick pieces.
  2. Toss the beef pieces in a bowl with cornstarch, coating them evenly.
Making the Sauce
  1. In another bowl, combine soy sauce, water, brown sugar, minced garlic, grated ginger, and red pepper flakes (if using). Whisk until smooth.
Cooking the Beef
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Cook the beef in batches, adding the first half in a single layer for about 1 minute, then flipping and browning for another minute.
  3. Transfer to a plate and repeat with the second batch using the remaining olive oil.
Combining the Flavors
  1. Pour the sauce into the skillet, scraping up any browned bits, and let it bubble for about 30 seconds.
  2. Add the scallions and return the cooked beef to the skillet. Toss everything together and let it simmer for another 1-3 minutes.
