- Slice the flank steak against the grain into 1/4" thick pieces.
- Toss the beef pieces in a bowl with cornstarch, coating them evenly.
Making the Sauce
- In another bowl, combine soy sauce, water, brown sugar, minced garlic, grated ginger, and red pepper flakes (if using). Whisk until smooth.
Cooking the Beef
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Cook the beef in batches, adding the first half in a single layer for about 1 minute, then flipping and browning for another minute.
- Transfer to a plate and repeat with the second batch using the remaining olive oil.
Combining the Flavors
- Pour the sauce into the skillet, scraping up any browned bits, and let it bubble for about 30 seconds.
- Add the scallions and return the cooked beef to the skillet. Toss everything together and let it simmer for another 1-3 minutes.
