For the mango salsa

For the tacos
  • 8 small corn tortillas Provides a warm and slightly nutty flavor base.

Method
 

Preparation
  1. In a mixing bowl, toss the shrimp with olive oil, chili powder, and a pinch of salt. Let it marinate while preparing the salsa.
  2. In another bowl, combine diced mango, red onion, minced jalapeño, lime juice, and a sprinkle of salt. Mix thoroughly and set aside.
Cooking
  1. Heat a skillet over medium heat. Cook the seasoned shrimp for 2-3 minutes on each side until they turn pink and are cooked through.
  2. Warm the corn tortillas in a dry skillet or microwave until soft and pliable.
Assembly
  1. Start by placing a generous portion of the cooked shrimp on each tortilla. Top with the mango salsa and garnish with fresh cilantro.

Notes

For added flavor, you can include minced garlic in the shrimp marinade. Optional extras include avocado slices or a creamy chipotle sauce. If short on time, use pre-cooked shrimp and sauté briefly to warm up before assembly.
