Mango Salsa
  • 1 large fresh mango Choose one that smells sweet.

  • 1 small chili pepper, diced Optional, for a bit of heat.
  • 1 juice fresh lime Additional lime juice for the salsa.
Tacos
  • 8 corn tortillas Because, duh, tacos.
Optional Add-ins
  • 1 cup shredded cabbage For added crunch.
  • 1 avocado sliced Optional for creaminess.

Method
 

Cooking Shrimp
  1. In a bowl, combine shrimp with olive oil, lime juice, salt, and pepper.
  2. Sizzle in a hot pan until pink and juicy, about 2-3 minutes per side.
Preparing the Salsa
  1. Dice the mango, chop the onion, cilantro, and chili pepper.
  2. Mix these ingredients with lime juice and salt in a bowl.
Assembling Tacos
  1. Heat the corn tortillas in a dry pan until warm and soft.
  2. Load the tortillas with shrimp, a big spoonful of mango salsa, and optional toppings.
