  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 large ripe mango, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 juiced limes
  • 1/4 cup red onion, finely diced
  • 1 optional jalapeño pepper, finely chopped for added heat
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

Preparation of Fresh Ingredients
  1. Wash your fresh ingredients, chop the mango into small cubes, and dice the avocados. Finely chop the cilantro and jalapeño (if using).
Cooking the Shrimp
  1. In a large skillet, heat the olive oil over medium heat. Season the shrimp with salt and pepper, then add them to the pan. Cook for about 3-4 minutes per side until they’re opaque and pink.
Making the Salsa
  1. While the shrimp cooks, combine the diced mango, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper in a mixing bowl to make the salsa.
Assembling the Bowl
  1. In each serving bowl, layer slices of avocado, then top with the cooked shrimp, followed by the mango salsa.
Final Touch
  1. Serve with lime wedges on the side for added flavor.

Notes

To ensure perfectly cooked shrimp, keep an eye on the color as they should turn opaque and pink within a few minutes. Additionally, ensure the mango is ripe for optimal sweetness.
