Preparation of Grits
- In a pot, combine water or chicken broth with a pinch of salt and bring it to a rolling boil. Stir in the grits and reduce the heat. Let simmer while stirring occasionally for 20 to 25 minutes.
- Remove from heat and set aside to rest.
Sautéing the Sausage
- In a skillet, heat olive oil or butter over medium heat. Add the smoked sausage and cook until browned, about 5 minutes.
Incorporating Vegetables
- Add the diced onion and bell pepper to the skillet and cook for another 5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
Cooking the Shrimp
- Add the fresh shrimp, Cajun seasoning, paprika, and diced tomatoes to the skillet. Cook until the shrimp becomes opaque, about 3 to 4 minutes.
- Season with salt and black pepper, mixing well.
Final Presentation
- Spoon the grits into bowls, and top with the shrimp mixture. Garnish with fresh parsley and red pepper flakes if desired.
- Serve hot and enjoy.
