Method
 

Preparation
  1. Season the chicken breasts generously with garlic powder, onion powder, paprika, salt, and black pepper on both sides.
  2. Turn the Instant Pot to the Sauté mode. If using olive oil, add it now and let it heat until shimmering.
Cooking
  1. Introduce the seasoned chicken breasts to the pot and sauté for 2-3 minutes on each side.
  2. Pour in the chicken broth or water, ensuring the chicken is submerged.
  3. Close the lid securely and set the pressure valve to sealing position. Set to Manual or Pressure Cook mode on high for 10 minutes.
  4. After cooking, allow the pressure to release naturally for 5 minutes before performing a quick release.
  5. Remove the chicken breasts carefully and shred them into tender, juicy pieces.
  6. Return the shredded chicken to the Instant Pot and stir to absorb the savory liquid.
Serving
  1. Serve the chicken immediately, garnished with fresh herbs and lime wedges if desired.

Notes

For healthier swaps, consider low-sodium broth. Ensure not to overcrowd the Instant Pot for even cooking.
