Preparation
- Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder.
- In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
- In a separate bowl, whisk together the buttermilk, red food coloring, white vinegar, and vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the cakes cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely.
Frosting
- While cooling, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth.
- Gradually add the sifted powdered sugar and vanilla extract until creamy.
Assembly
- Once the cakes are fully cooled, level them if necessary and frost between the layers, on top, and around the sides of the cake with your luscious cream cheese frosting.
- Garnish as desired, perhaps with sprinkles or fresh berries.
Notes
For best results, ensure ingredients are at room temperature. Mix just until combined to avoid a dense cake. Consider decorating with edible flowers or heart-shaped sprinkles for an extra romantic touch.
